PEAR FRANGIPANE TART
I teach Baking & Pastry classes. We made this beautiful Pear Frangipane Tart in two of my classes last year. Frangipane is an almond filling that gets baked into the tart shell with the pears placed on top in a decorative design. The crust is a sweet dough and oh so delicious with the frangipane and pears.

MILE HIGH LEMON CAKE
Mile high lemon cake and lemon meringue pies for a party last night. The cake was about 10" high and built onto a cake stand. It was the most nervous I have ever been delivering a cake. Thank goodness it got to the party without toppling over.

LACY DESIGNER DESSERT
This exquisite dessert was made for a small dinner party this summer. It was a real challenge working with chocolate when it is 115 degrees outside. Thank goodness for air conditioning and three refrigerators.
The description of this dessert is:
Milk Chocolate Mousse, 70% Valrhona Chocolate Creme Brule, Salted Caramel, Praline Krispie, Encased in a lacy chocolate shell, garnished with streusel and dried raspberries.
You cannot believe how yummy this dessert is. It is creamy, chocolaty, crunchy, and salty all wrapped up into one package.
It took a lot of time to execute it but it was well worth it.

SPORTS COURT PARTY DESSERTS
The mini cupcake flavors are Lemon, Coconut, and German Chocolate Cake.
The squares are an Apricot Crumb Square.
Not pictured are Macaron and Chocolate Fleur de Sel Cookies.
I received a note from my customer:
Want to let you know your efforts were appreciated. What a GREAT job you did. Everyone loved them – not surprising, but always a good reinforcement of decisions as to what to serve. They were perfect!
