STENCILED CAKE















I was teaching the Advanced Professional Baking & Pastry Class at Cooking With Class La Quinta tonight about how to stencil onto a cake.  I just realized I had never posted a picture of this cake.  So here it is, better late than never.
I love stenciling on cakes and cookies, it gives such an elegant touch.
The flavor of this cake was chiffon cake with pastry cream filling.

BABY SHOWER CAKE

I did this cake for a baby shower that was held at an art gallery.  The flavors were white cake with raspberry and lemon fillings.  My inspiration for the cake was the invitation.

MICHAEL'S BIRTHDAY CAKE

Just a pretty cake for Michael at Thairapy Hair Salon in Palm Desert. Flavor was lemon, his favorite!!  The fresh roses on the cake are from my organic garden and they are edible.  I also made the white chocolate decorations using colored cocoa butter and Callebaut White Chocolate.

SALLY'S HOT DOG CAKE

Sally had something to do with Hot Dog's and they wanted some incorporated onto a birthday cake for her.  I decided to do a picnic theme.  Flavors for this cake were chocolate cake with raspberry mousse and fresh raspberries.

AVA'S 5TH BIRTHDAY CAKE

I have make several cakes for Ava's mom so when it was time for Ava's 5th birthday party she wanted me to make her cake.  She was very specific on flavors and design.  She wanted white cake with chocolate fudge filling and the cake had to be a Hello Kitty design with pink as the major color.  I followed her instructions and here is the result.
She is the most adorable little girl and I hope to do many cakes for her in the years to come!!
I received this note from Ava's mom upon her sending me the picture below:

"I was talking with her this evening and said, "so, you think Miss Pam did a good job on your cake?"  Ava says, "Mommy I think she did an excellent job".

BRADLEY'S 40TH BIRTHDAY CAKE

Bradley's cake was for his 40th birthday and he likes music and the Boston Red Sox.  He is also a radio announcer.  It was a surprise birthday party and wow was he surprised with everything including this cake.  Flavors were chocolate cake with a hazelnut crunch filling, and chocolate mousse filling.

THANKSGIVING PIES


Here are two of my pie selections for Thanksgiving.  Apple pie and Pecan Pie.  Notice the apple in the center of the apple pie.  It is made out of dehydrated apples that I made into a rose shape.  The leaves on the apple pie and pecan pie are made out of pie crust and dusted with powdered sugar.

OMBRE CAKE FOR FAYE'S 80TH BIRTHDAY

This cake was made for some of the ladies at the country club where I used to work.  They were having lunch at The Parker in Palm Springs to celebrate Faye's 80th birthday.  I worked at this location too but when I worked there it was called the Givenchy Hotel & Spa.
Flavors of this cake were Vanilla Chiffon Cake with two layers of Coconut Mousse and one layer of Passion Fruit Bavarian Cream.

CAKE POPS

Cake pops are all the rage.  They can be made out of cake or cookies and be any flavor you like.  These are Lime and yummy.  Dipped in White Chocolate and decorated.  They can also be rolled in nuts, coconut, chocolate jimmies, almost any thing you can think of.  Fun to eat too!!

RICHARD & JEFFREY'S WEDDING CAKE

When I was told that the colors for this wedding cake would be tan, black, & turquoise I was wondering if I could make it happen.  This is what I came up with and here is the testimonial from the groom's:

Flavors were 4 layers of vanilla cake with filling layers of ganache and chocolate mousse.

WEDDING CAKE FOR ROBERT & JON

Flavors of this cake were vanilla, chocolate and coffee.  Five layers of vanilla cake and the filling layers were chocolate crunch, coffee buttercream, mocha buttercream and ganache.
I attended the reception and actually cut the cake for the guests.  I received many comments such as "this is the best cake I have ever tasted".  Love hearing that!!

The flavor of this cake was German Chocolate with the traditional coconut pecan filling.
This was a fun cake to make and it was supposed to look like the snowboarder wiped out in some deep snow.

PARTY FAVORS


I made these party favors for one of my customers.  She gave one to each of the guests at the party.  Behind the cookie, wrapped in cello is a star shaped candy dish filled with peanut brittle.  As you can see we decided upon a red, white, and blue theme.
She absolutely loved these!!

A VERY SWEET BRIDAL SHOWER CAKE

This cake was done for a bridal shower with an afternoon tea theme.  That gave me the inspiration to make a lace tablecloth for the top of the cake.  I embossed the corners and highlighted them with luster dust, then "picot" the edges with royal icing string work.
The border was made by cutting out individual flowers and scrunching them to give a ruffle look.
Flavor of the cake is Chocolate Cake with a layer of Crunch and Ganache and two layers of Chocolate Mousse.

JULY 4TH COOKIES & CUPCAKES

 Happy July 4th 2013 everyone.  I made 84 cupcakes and 120 cookies this year for some of my clients parties.  Sure got me in the spirit of fireworks and family get togethers.
